Our winemaking R&D team is leading a consortium with the University of Aveiro (through their Research Unit: QOPNA) and the National Institute of Agrarian and Veterinary Research (INIAV), which is conducting a study into the development of a new range of ports, made specifically for mixing into cocktails. The Q-AD4PurePort project aims to develop a system of characterising and selecting different distilled wine brandies to be used in the production of ruby, tawny & white port.
The process of producing port requires the addition of brandy (aguardente) to stop the fermentation. The brandy is a spirit distilled from wine, requiring approval from the Port Wine Institute (IVDP). However, the brandies are currently chosen by sensorial evaluations, rather than analytical indicators provided by the supplier. As a result, our R&D team is looking to develop a new analytical method to improve the control of the selection of spirits, guaranteeing (i) consistency of quality in the production of port, (ii) significant improvements in the quality of premium port, (iii) commercialisation of a new range of ports.
The INIAV are the leading Portuguese research group working with aged wine spirits with huge experience in sensory evaluation. The University of Aveiro are the leaders in Portugal investigating wine aromas. The study is financially supported by the EU (FEDER).
